Sometimes timers are necessary, sometimes they're not. There are foods that require very specific cook times.

Who wouldnt? Theres no reason not to. Espeically if its something like "roast for 1hr". There definitely things you dont need to time like "cook each side of the pancake for 2min" you can just eyeball that. But for long times like 1-4+ hr, it would be very easy to over time it.
