cooking was born from necesity, in the past there wasnt variety and when a crop failed you had very little to work with and sometimes being a good cook meant not starving to death
so how can people call themselves cooks today when you go to a store with thousands of ingridients and get to pick and choose whatever looks nice? no wonder everything is a gimmicks and luxury restaurants sell ingridients that are hard ti get just because they are hard to get, in order to really become great nowdays you would have to lock yourself in a cabin far away from civilization and work with wathever the woods provide for you for at least three years

Yes, the best cooking developed in country-ass parts of France, Italy, India, China, and Japan from necessity, but that's a matter of techniques and lack of options.
