What are some comfort foods that can brigten your day almost always?
Preferably home made food that's linked with memories.

For me that would include:
>Riz casimir
>walnut bread with gruyere and bündnerfleisch
>mandarines
>porridge with cinnamon and applesauce
>whole roastet chicken
>warm gingerbread cake with butter
>fondue/raclette
> grilled cheese sandwich
>hummus with fresh pita bread
>warm chocolate chips cookies with cold milk
>coconut curry with shrimps
>pizza dough flat bread, baked on the stovetop with really good olive oil and fresh gost cheese
>baked apples, stuffed with oats and cinnamon
>home made soft caramels

How do you make homemade soft caramels?

I just looked it up after making this thread because i startet to badly crave them.
It depends on what consistency you want them to be. I like it when they are very soft and basically melt in your mouth.
To achieve that, you take half cream and half sugar, bring it to a boil. Lower the heat and let it simmer. It will take a while, 30-40 mins for the caramel to thicken. Gardually add in butter. If you have a sugar thermometer, the mixture should be at about 120*.
When it starts to get creamy, empty it on a baking pan lined with a baking sheet and spread evenly. Let cool a little, then cut into desired shape and size. All done.
I like to add some coars salt on top before they cool completely, because i like salted caramel.

Supreme pizza with grated asiago cheese baked into the edges of the crust, or bread baked with asiago on top. Even just snacking on little 1cm cubes of asiago makes my nights a lot nicer. I have a wedge in my fridge, might eat a little later, but will most likely save it for pizza.

Can of spam sliced a hair less than 1/4" thickness. Pan fried until cripsy on the outside.
I eat with rice and some sort of spicy dip. Usually sriracha or gochujang
I stopped eating that shit as often because a can of spam has a massive amount of sodium in a single can.
