1) Aunt Jemima Whole Wheat blend (it's barely whole wheat, just tastes like something more homemade and less sweet).
2) Golden "Malted" Waffle and pancake mix. Yes, that little zing of malt makes it better and it has vanilla flavor that isn't sugar flavor, if you know what I mean. Hard to find tho...
3) Bruce's Sweet Potato pancake mix is nicely spiced and really yummy. Also hard to find..

If I am going to use a mix, it's usually #1. But, if I am going for the pancake mood? I am getting out my blender and whirring up a batch of Dutch Baby batter in 15 seconds flat and pouring it in the ol' buttered up cast iron.
