Also, our industrially produced meat doesn't have all that much flavor to it. If you took really good pastrami (or whatever other meat) and loaded up a sandwich with that much of it it would be far too strong tasting. But cheap, nearly-flavorless industrially produced meat? That takes fine if you use a lot.

Fried ham sandwich.

Fry a slice or two of ham in olive oil at medium high heat until nicely browned. Put on lightly toasted bread with mustard and lettuce.

Another favorite is a bean sandwich.

Slow cook beans with onions and adding some fried bacon, ham, or sausage a half an hour to an hour before finishing the cooking. Smush up the beans just a little (so they don't roll off the bread) and put them on a whole wheat bun. Add mustard, onions, and lettuce on top and then cover with top of bun. I'd rather eat this than most other sandwiches.
