Post the best of the best of American pizza (non-American styles like Neapolitan or Sicilian is fine as long as the restaurant is in America).

This is something I didn't understand until I lived in the US. The US really does have the best and worst of everything. The mass-produced stuff is always crap, but you'll never fail to find something small and local that is truly amazing.

Failing that, it's easy to find the best imported stuff from all over the world here, I suppose.

Both flyover and new york pizza can be good or bad. I've lived in both, spent several years each in a bunch of different flyover states, and many many years in NYC, and if you pick a spot at random in either place, it's more likely to be terrible than good. Plenty of locals will call terrible pizza good because they legit don't know any better. Take pizza luce in minneapolis for instance. Huge following, awful pizza. Then again you go to NYC and people actually buy those two bros slices.

New York/New Haven style pizza is great but it fails once you try to mount on too many toppings. When done right, however, you can't beat the taste of brick oven pizza.

Normal hand-tossed dough is great for stacking pizzas with tons of toppings, though. It's cheap and easy to make, and while it isn't "artisan" it's far from bad.

Chicago style is straight retarded, though. They fucked up a pizza and decided to adopt it as a regional classic to save face, but everyone can see through their dumbass ruse.

Most pizza uses low-moisture cheese. It's still "fresh" but it's not the same as the mozzarella you get that's immersed in brine when you buy it.

desu low-moisture cheese works better on American style pizzas. Unless your oven is 500+ Eurodegrees, fresh mozz just makes a slippery, watery mess.
