I have to bring a dish to a potluck on Tuesday, and there is a farmers' market today in my town. I would like to incorporate the fresh produce into my recipe. /ck/ what are some good recipes to bring to a potluck involving veggies? Pic unrelated.

Pesto chicken thigh stew with Parmesan pine nut dumplings. It has loads of vegetables in it. Pic related was my attempt. Prep is a massive pain though.

A simple fresh veggie and dip tray is sure to go over well with everyone, including "health conscious" people who would be afraid to try anything more interesting. You could still tell people you sourced the veggies from a local farmer's market for potluck-peen.

Obtain 1 package "little smokies" 1 package cheap ass bacon. Wrap each little smokie with 1/2 piece of bacon, secure with toothpick. Place in 8*8 pan, sprinkle with 1/4 cup light brown sugar. Bake at 350 for 25-30 mins. Try not to eat the whole fucking pan of them.

What CAN'T you make? Everything is in season late summer/early fall is the best. Make a lasagna with scratch made red sauce full of squash, peppers, eggplants, carrots and fresh basil and of course plenty of fresh tomatoes.

Here's an ez-pz stuffed veggie recipe.

>blend/process cauliflower, mushrooms, and walnuts until it reaches a rice or ground-meat like consistency

>mix that shit with soy sauce and ground up southwest spices (cumin, pepper, chili, etc. look up recipes for good southwest spice mix)

>cut and hull some whole jalapenos

>fill those halves up with the processed mix famalam

>bake in the oven on 450 degree heat for 30 minutes to an hour

>add spicy sauce if you want

There you go, spicy stuffed jalapeno's that will trick people into think they're eating meat when it's actually a vegan dish.
