This restaurant actually does a nice job on the Dutch Baby, the german apple pancake, and some of their other specialties like sourdough, 49ers, and buckwheat pancakes.
The dutch baby isn't hard to make either. (It's a chain, but it was also once a James Beard winner).

At places like ihop or waffle house or other chains, look for the unusual like the harvest nut and grain pancakes, buckwheat or sourdough too or just the pecan waffles or real blueberry pancakes. Restaurants local to you with a famous sunday brunch but which aren't open any other days might do some amazing fussy batter just for the pancake menu item. Read up and do a little research.
