From an outsiders perspective, I was jealous of her families food. Not only did they always have beef, but beef of a quality regular people just can't afford all that often. I feel like its a bit silly to judge our parents to hard on their inability to cook or teach us how. We live in a food renaissance of diverseity and availability of ingredients at a time when exposure to new ethnic dishes is the highest its ever been. I'm so happy my mother can cook and taught me to cook fairly young. Of all my friends in their 20's, I'm the only one that consistently cooks dinners.

Her specialty is Italian-American foods. Chicken Parmesan, homemade all-day red sauce, chicken piccata, meatballs, ect. She's also pretty good at your average american foods, making your steaks, seafoods, meatloves and stuffed vegetables with much more flavor and care than your average middle class white mom.

She's disabled now and can't really cook much anymore. She tries, but it takes her ~2 hours to make a simple dinner and is in pain for days afterwards.

Hmm. For savory I'd say this potato dish that was potatoes cooked in a tomato sauce with onions, various fresh herbs (I remember parsley, there were others too...gotta look at the recipe), and roasted garlic. Either that or 16-bean soup. Or stir-fried vegetables with soba noodles.

For dessert, it's butter cookies hands-down. She has her grandmother's recipe and passed it on to me. I occasionally make them for my students at the end of a semester, and the students go crazy for them.

Mom liked to make:

Corned beef and cabbage with boiled potatoes (her favorite meal from her own childhood, very tasty, mad house smell kind of like piss)

Roast beef with carrots, potatoes, onions, and celery roast alongside in pan (the veggies got so beefy and juicey, even if they overcooked a little it was very good)

"White trash sushi"- pickles wrapped up in ham and cream cheese, then sliced into little sushi-like pieces. Kind of gross conceptually but a fun snack for kids.

"Chinese chicken salad"- uncooked ramen, lots of cabbage, sesame seeds and oil, cooked leftover chicken, shredded carrots, scallions, soy sauce. Crunchiest/best mouth feel the night of preparation but the noodles and chicken got more saturated with flavor so the rest of my family like it better a day to a week after preparation.

Mac and cheese with tiny bits of hot dog

Big-ass quiches with homemade buttery/flakey crusts, with big slices of tomato right at the top to give them color and flair

Dinners were always eaten at the table and mostly we'd just listen to dad talk.

My dad on the other hand made pancakes or french toast almost every morning before he would go to work, and he fished so he cooked fish in a lot of different ways.

My favorite was smoked, though. Smoked steelhead or smoked salmon, both realllly fucking good.

i was lucky. my mom made really good spaghetti with meatballs, ham tetrazini, meatloaf, tacos, beef burgundy, chicken cacciatori, chile (later on), bread, apple pie, mexican and spanish rice, salmon croquettes, fried chicken, potatoes au gratin, cauliflower au gratin, lasagna, beef stroganoff, pork chops, french toast, pancakes, and lots of others i have now forgotten. i miss her cooking. she was a functional alcoholic, was not abusive, but it still was a nightmare even at her level of misuse (not as bad as many, manyothers). smart, king, gentle woman, heart in the right place, a flaming liberal, which i will be till the day i die.
