You'd be surprised at the leap it would take to go from what they have now to full auto. What they have no is pretty cheap and easy:
A round table with black heating elements in it that can slowly spin. They've covered the top with foil.
Two vats filled with oil and egg.
Simple color sensors to control the electronic valves/motors. (If black pour; else !pour;)

The flipping guy's part is why it's not full auto. It's hard to do with robotics, you'd have to spend a decent amount of time/money on the testing (and design). Sensors to decide when the egg is done enough to half-flip. Lifting and tilting the pan for the flip would make the automation of the swirly guys' part more cumbersome. The hand motions of flipping the omelet are very hard to reproduce with robotics, and that's before you factor in how a human will make slight alterations to his motions based on tactile and visual feedback that sensors will also have trouble emulating. (This part feels stuck, I missed some at the side, etc.) Removing the omelet would be easy, but likewise make the swirly part more cumbersome.
So it's just not worth the effort. Easier and cheaper to just stick a guy there. Why not just have the flipper there and automate the swirly guys' part? The mechanism to replace them wouldn't be hard to test/design. The worst part would be that you either need to make sure the mechanism has a mechanically fixed starting point, or has feedback sensors to know its position, so that stuff is lined up properly for the pouring part. Flipping guy has his hands full though, so you'd need to have another guy watching for and handling malfunctions. And since you need a guy there anyway, why not just have him do the work anyway.
