If I payed $300 for that meal and got that carrot tartar I would be laughing so hard that it would only make the experience even more enjoyable.

But do you force feed carrots or get them drunk and massage them if you want them to be a world class ingredient?

>> No.9396089

You go to high-class restaurants for the experience, not to satiate your hunger. Unfortunately there's so many snobs that this will always be a lucrative niche. Hell, where I live there's a high-class pizza place where the cheapest pizza you can get is at least 40 bucks since they use shit like truffles and other super expensive ingredients, and people flock to that place since they want others to know that they're loaded enough to pay for something like this.

>> No.9396970

Depends on what you cook with it. It makes great jam/preserves. It's good in hot sauces. And it's fucking fantastic just seared on a skillet (or grilled).

I'm not too sure about the "chicken in a watermelon" thing, but I think it's based on historical precedent or an established recipe. I remember a guy on one of the Hell's Kitchen episodes who made a "chicken in a pumpkin" as his signature dish. Yeah, a pumpkin isn't the same as a melon but the basic idea is the same.

It's not too much in terms of filling, but I don't see why you would add that much with such little variety. Skip one meat, skip the mashed fries and perhaps add some grilled mushrooms, some good tomatoes and some sauce.

You'd be surprised at the leap it would take to go from what they have now to full auto. What they have no is pretty cheap and easy:
A round table with black heating elements in it that can slowly spin. They've covered the top with foil.
Two vats filled with oil and egg.
Simple color sensors to control the electronic valves/motors. (If black pour; else !pour;)

The flipping guy's part is why it's not full auto. It's hard to do with robotics, you'd have to spend a decent amount of time/money on the testing (and design). Sensors to decide when the egg is done enough to half-flip. Lifting and tilting the pan for the flip would make the automation of the swirly guys' part more cumbersome. The hand motions of flipping the omelet are very hard to reproduce with robotics, and that's before you factor in how a human will make slight alterations to his motions based on tactile and visual feedback that sensors will also have trouble emulating. (This part feels stuck, I missed some at the side, etc.) Removing the omelet would be easy, but likewise make the swirly part more cumbersome.
So it's just not worth the effort. Easier and cheaper to just stick a guy there. Why not just have the flipper there and automate the swirly guys' part? The mechanism to replace them wouldn't be hard to test/design. The worst part would be that you either need to make sure the mechanism has a mechanically fixed starting point, or has feedback sensors to know its position, so that stuff is lined up properly for the pouring part. Flipping guy has his hands full though, so you'd need to have another guy watching for and handling malfunctions. And since you need a guy there anyway, why not just have him do the work anyway.

I don't understand why you would buy white strawberries when regular strawberries come in a really strong, beautiful, shiny red color. The strong red color is an important part of what makes strawberries so amazing and popular.

These strawberries look sickly and dull compared to regular strawberries. And the name is stupid, I wouldn't call a regular red strawberry for red ruby, and he shouldn't call a white strawberry for white jewel.

White strawberries are not albino strawberries, they lack or are low in a protein that causes regular red strawberries to turn red when they ripen. White strawberries still ripen, but because of the lack of that protein, they remain white. White Jewel strawberries are low, but not devoid, of that protein, which is why you can see certain strawberries that have small streak of red. There are many cultivars of white strawberry aside from the one showcased in that clip.

I went and double-checked the numbers and apparently the individual strawberries are $10 each, while the pack (# unspecified, but a small pack) goes for $40, which isn't even the most expensive breed of JP strawberry you can buy. There's a variety called Kokota that goes for roughly $22 per berry. Pic related.

Pineapple is nice to have once in a while, mango is a bit dodgy. I've had better luck getting consistent quality Ataulfo mangos than Tommy Atkins.

Referring to it casually as a "white strawberry' is a simple descriptor of the type of strawberry without referring to the specific cultivar because most normalfags don't care about cultivars. You could try to tell them the difference between Red Ruby or L'Amour, but they wouldn't care. They're just red strawberries in their eyes. Same for the White Jewel vs other white strawberries.

Have you never seen one of those shows about how foods are made in a factory? Yeah, it's a big investment, usually made by nation wide corporations, but the product typically comes out up to specs.
