Cured egg yolk. Shit is like parmegian reggiano level umami grated over salads, pastas, soups, etc. I use local farm fresh organic eggs but it would work with your cheapass factory garbage as well, I suppose. Basically separate yolk and cure covered in kosher salt in the refrigerator for 1 week then hang in cheesecloth in the refrigerator for another week. Shit takes any savory dish to another level.
