I use them as a guideline, but usually do not discard based solely on them. For most foods it's easy to tell if it has gone bad just by inspecting it. But if it's long expired meat I'll probably just toss it without inspecting.

Only when I'm shopping. I buy the food with the longest date.

Once I have the food I ignore the dates completely and use my senses to judge the food.
