Never felt the need to peel carrots if they are being roasted. Heres the chicken. I rubbed butter under the skin and threw in some rosemary and lemon. I didnt know what to stuff it with so i just threw in a few heads of garlic and some lemon.

Nothing fancy. Canned lima beans and corn. Home made rice and beans. Sriracha marinated pork loin. Took 45 mins from start to eating.

It was all delicious. Rice and beans are on point as usual. 1 diced onion sauteed in bacon grease, 1 cup dry rice, used 2 cups home made chicken stock. some adobo and packet of sazon and can o beans at the end.

The loin was from a package. It's wednesday not going fancy

I honestly don't know. So many 20-somethings think cooking is some archaic skill they shouldn't even try to learn when it's like 5 very basic things you can learn in an afternoon and then do endless variations on.

Chicken is dirt cheap, easy to cook and delicious. I think I pay ~$.59/lb for whole birds.

A lot of it is just straight unwillingness to learn.
