Hey /ck/ I need some help
I bought too much beef stew meat
I'm making jap curry with most of it but I have about a pound and a half left over that I don't know what do do with
I didn't really want to make beef stew given jap curry and reg beef stew are so similar
Got any recipes to help an anon out?

make beef stew with dumplings.

how do you buy too much beef? It's so expensive, I'd be sure to inspect it first just in case something is wrong with it.

That would work with a tender cut like a steak, but using stew meat for that would come out like chewing on a piece of tire rubber.

i bet you could marinade or brine or something to help that

Most marinades and brines do exactly zero to help with tenderness. Though something containing raw pineapple (and certain other raw fruits) could work due to the bromelian content. A jaccard might work too.

a citrus marinade might help
you could also attack it with a meat hammer

freeze it for an hour so it hardens, chop it into much smaller chunks, simmer those for a while, then cool and put in a pie shell. Use the fond from the simmering pan to make a jus, add some roux as a thickener and pour over your meat in the pie. Cover and bake. Meat pie.
