I usually judge by eye how much I need but I'll try to estimate it. You should adjust depend on how much pork and rice used.

300 g of thinly sliced pork loins
150 g of cooked rice
Half an Onion
6 cloves of garlic
3 bird's eye chillies (I like it spicy, you do you)
2 tbsp of Soy Sauce
2 tbsp of Fish Sauce
2 teaspoon of Sugar
2 teaspoon of black pepper
1 tbsp of Dark Soy Sauce (optional, this is just for the colour)
1 tbsp of Roasted Chilli Oil (optional, adds a nice smooth flavour and colour)


1. Sweat the onion in the pan, after a couple of minutes add minced garlic and chilli.

2. Wait until the garlic is aromatic then add the egg to the mix (the trick to not having soggy egg is to add it into the hot oil). Wait for the egg to cook about 60% then mix. Plop the roasted chilli oil in.

3. Add the pork in and stir-fry until it cooks to about 80% then you add the rice.

4. Put all the seasoning into the mix, be careful with the fish sauce, it's very salty.

5. Top it with some chopped coriander and fried egg

Most of these ingredients are easily found at the Asian supermarket. Btw, never use oyster sauce in a fried rice. It's offensive to my people.

First time in a while that I've come back home visiting parents, told them I'd make lasagna for 5.

Except, they don't seem to have much of proper kitchen tools (anymore...?). Only a couple of dull cleavers and pans... Probably going to make a simple sauce and use easy/instant pasta sheets. also, nothing in terms of herbs/spices aside from pepper and salt...

what does /ck/ suggest for sauces? What I had in mind was:
- tin of concentrated paste, tin of chopped tomatoes
- lb of ground beef
- simple mirepoix (carrots, celery, onions) and eggplant
- a bit of concentrated beef stock from cubes
- w/e fresh herbs on sale
- canned bechamel and some bagged, grated cheese


Anything simple I can do to spice things up?
