its smoked garlic. its smoked for a long time and it turns all black. its got a pleasant woody-smoky taste and its nice to eat on its own as well. i scrape a bit on toasted bread and add olive oil and a little sea salt and just eat that. i cant speak for op but i think he likes it too.
he is right though, they are pretty smelly.

no that's right it's kept at low heat for like 2 months, it's not exactly fermented but it's very similar
