Carbonara with cream is absolutely something we do. So is carbonara with peas. And carbonara with onions. If you haven't noticed, each variation is appended with "with _____" after it because each is a variation on the standard.

Carbonara con panna. Carbonara con piselli. Carbonara con cipolle. These are things. They're all made the same way, just with an added ingredient. And that's fine.

The worst experience I've had was in the US when friends wanted me to try an "Italian" restaurant out with them. I ordered carbonara figuring it would be the safest thing. What I got was a plate of spaghetti topped with olive oil and crispy-fried ham. Then the waiter poached an egg tableside and put it on top. THAT was not any variant of carbonara. Still good, though, just not the same thing anymore since the technique was entirely different and it didn't even have cheese or pepper.

I'm not saying that the French don't sometimes integrate foreign ideas in food, but generally speaking the French are infamous for sticking to tradition.

Also, don't confuse actual French chefs who grew up and worked their entire careers in France with a foreign Chef who takes on a "stage" in a French restaurant for a year and then goes back home. It's the former who are sticklers for tradition, not the latter.

Traditional food developed slowly over time by incorporating new ingredients as they became available by trade or conquest.

Fusion food is the brainchild of a Chef who decides to take two (or more) totally unrelated cuisines and combining them.

There's a massive fucking difference between, say, the Italians incorporating tomatoes into their food once they became available form the new world versus Hipster McChef deciding to cook a British pork pie with Char Siu.

Chances are that Pajeet's curriy has far better ingredients than the British one. That's the irony of 3rd world cuisine. Since they often lack refrigeration then the only choice is for the food to be fresh as hell. Go to a market in Vietnam, for example, and every single thing there was harvested that very same day, probably form only a few km away. Want chicken? The fuckers are running around and don't get slaughtered until you ask for it. You can't get anything fresher unless you happened to grow it yourself. OTOH we in the West walk into our sanitized supermarkets and buy produce that was picked weeks ago, flavorless factory-farmed meat, etc.
