Holy shit guys. I casually Googled ricotta out of curiosity, and from the Wikipedia article I found out it's actually supposed to be simple to make. Not a big deal in and of itself, I know, but bear with me. I know nothing about making cheese, so I searched how to do it on YouTube and found this gem: https://www.youtube.com/watch?v=1VkX4zBMz2E

I'm quickly developing a crush on that woman. But regardless of that, the video is pretty well made and informative. As an added bonus, the channel seems pretty fucking good too. It has food porn, recipe videos, and informative stuff about farming practices all in one place.

Ricotta is a pretty bland cheese so be sure to season it.
Your meat sauce should be thick and brown not watery and red.
If you can't find fresh mozzarella mix half and half ricotta/cheddar and top with that.
Use full fat everything lasagna is not diet food.

Nothing wrong with using a store bought sauce in a jar. Add in a small box of frozen spinach and a couple of red or yellow or orange bell peppers and you can have a vegetarian (not vegan of course) lasagna and there's nothing wrong with that.

How? It's not hard. Use equal parts oil and all-purpose flour. Heat the oil in a pan on medium low, sieve the flour in gradually while stirring gently with a whisk until combined with the oil. Continue whisking as the roux cooks. The longer it cooks, the darker the roux will get. For bechamel it should be a light blonde color, for stuff like gumbo it should be a very dark brown.

People have applied the term lasagna to a huge variety of casseroles that follow the same basic structure, despite that fact that no actual lasagna noodles are actually used. Best example would be Mexican lasagna, utilizing tortillas as the noodles.

Make your own fresh sheet noodles - and add a pinch of baking powder to the noodles. When they bake, they'll get a little fluffy. It's wonderful. Don't bother boiling them in water before cooking them, just us a little extra sauce.
