anywhere where a bunch of people migrate too that will then have a huge collection of food from across the states in addition to the fusion foods that result from all of those cuisines being in relatively close proximity.

Louisiana.

The United States is pretty fucking top tier in the world when it comes to cuisines, despite the shit it gets from non-Americans. Every region, county and metro area has at least one unique dish that has international recognition, and Americans are second to none when it comes to comfort food.

But Louisiana wins for me without question. It has so many distinct dishes, cooking methods, cultural rituals surrounding food, and ingredients you'll not find anywhere else. East/Southeast Texas comes damn close but I never once had a bad dining experience anywhere in Louisiana for the four years I lived there.

Side note, I was raised mostly in California and used to think like this >>9074062. But that's just fucking wrong. Quality of food is greater than diversity of cuisines any day of the week, it's just easy to convince yourself otherwise when your local cultures have become so fucking blurred no one knows how to specialize in any one thing, to perfect it over generations.

I have traveled all over the south. Includiing Louisiana NC, SC, Florida, Georgia, Tennessee and Texas

NC >The Best BBQ, while all the states had pretty good BBQ only SC and kinda Georgia could compete.

SC >The best sea food without the use of Cajun spices like Louisiana. Pretty good weed and acid too.

Georgia >Some of the best black people soul food/ traditional southern food there is. Also lean is really easy to get there as well as weed.

Florida >Honestly probably one of the worst places, still had great sea food and other things. I just had better else where. They did have the best drugs and easiest to find. out of all the states.

Louisiana > Id say my favorite southern state for food, amazing sea food with hella spices and hella soul food and normal southern food. Also mardi gras is lit as fuck, got some really good shrooms there.

Texas >Good bbq and Mexican along with texmex which is good but its just not my style. Also the states way to fucking big and its hard to find drugs!

Tennessee > Some great country food usually served by fucking yankees, hate the place, the rockys are nice but fuck that place and fuck country music. All the drugs I got from their were subpar.

different guy
when I was living down in Pilsen there were many options. I don't have much so my go-to place was the Casa Cafe by Western and Cermak, 99 cent chicken tacos
By quality, one of my favorites is Xoctli, small place, corner of Paulina and Cermak, my old block. BYOB and handmade tortillas. 5 Rabanitos, 18th and Wood, high-quality place, the owner/chef was a protege of Rick Bayless, but it's a bit pricier, not at all unreasonable. Try the cochinta pibil tacos. If I were taking someone from out of town to impress them with local eats, this is probably where I'd go.
I'm not very well-plugged-in but that's my basic recommendations for Pilsen.

I live in Bucktown/Logan Square now, haven't really tried too much in the neighborhood yet, but there's a lot of Cuban and Puerto Rican options around here. I know Logan Square has a big hispanic heritage but I'm a bit of a homebody. I hear La Pasadita is a big deal, never been, no clue where it is.

It's a real shame it's so hard to find anywhere else because it is an actual art to make. There is no such thing as "good Cajun".. its always either fucking amazing, or it's just absolute garbage. Probably why its not more popular because it's so hard to make and too many people have had crappy Cajun so there isn't a demand for it.

still though, two weeks, I'm sure it's not the greatest beignet-and-cafe-au-lait spot in the world (not the greatest cafe du monde?) but if you come home and tell someone you were in NOLA, they're gonna ask if you went. what is he to say, "no"?

all this disregarding the fact that one of my earliest memories is eating beignets there in the rain, with a balloon animal, after adamantly refusing to eat them at first. somehow my 3 year old brain didn't expect fried-dough-covered-in-powdered-sugar to taste so good. I'm wiser now.

I know not what exactly I have wrought, but it is the purest expression of my rage. And it is aimed at you.
