Hey y'all, tomorrow I'm smoking 4 racks of ribs and an ~8.5lbs boston butt.

I'm in a bit of trouble since I need BOTH of them cooked and ready by the evening, but obviously, ribs and butts cook at different durations. How should I do it?

>Put butt and ribs on at the same time
>ribs will be done in 5-6 hours
>put them away
>reheat once butt is done and pulled
This isn't ideal... But might be necessary

or

>put the butt in the smoker
>at noon put the ribs on
>introduce a couple more chunks of wood
>both are done in the evening at the same time
Problem is, doesn't smoke in the middle of a cook make a bitter taste? I dunno.
Please help.

put them on at the same time, wrap ribs tightly in plastic wrap and foil when you take them off, keep small plastic cooler

sauce them and put them back in smoker while you take the pork butt off and get it ready

is this a dinner or a kick back with the food already on the counter?

but i agree with what the other anon said, put them in the same time. I would not use plastic wrap. Try to find some butcher paper and wrap the ribs with that and throw them in a cooler with some towels.

i personally add wood chunks(dont use chips) through out my smoke, if im not wrapping anything. but i mainly use cherry and i let my hickory burn for a bit before i put anything in the smoker.

Gonna fire the smoker up in an hour or so. With any luck, the butt will be done by 6pm EST.

Decided that I'll put the ribs on at noon. Adding a couple chunks of wood shouldn't hurt the butt any.
