Is anyone well versed in West African cuisine?

I'm trying to surprise my boyfriend with Groundnut Stew but mine is always kinda bland compared to the type I've tried overseas.

What like Ivory Coast? Don't quote me on this I'm I'm pretty sure it's a lot of fish. Branzino, sea bass. etc.

Starch and vegetables I have no idea, but I assume it's plantains, yams and whatever veggies are available.

to me, what builds the flavour is the soup stock

and what makes west african food soup stock uniqe is usualy a ixed surf and turf kinda stock

go to an asian mart, look for dried shrimp or shrimp powder, or craf fish magi stock cubes....boil some beef and add in the fish product...this will boost your flavour

curry powder, used judiciously as a seasoning, is also a good tip
