You will learn the difference between tender and soft.
Sous vide has a tendency to make things disgustingly soft. Advice would be to cook 1 doneness level above what you would usually aim for and to keep cook times under an hour.

For tough cuts of meat you would usually stew or braise just do that instead.

Congrats on a good purchase, anon. Forget the memehaters. My anova is great- comes in particularly handy crap that's easy to overlook like boneless pork loins and boneless skinless chx. Also does wonders on whole eggs.

Tips:
>you can cook from frozen! When I buy a big cut of meat, I break it down, portion and season and then vac-seal individual bags. Then they come out of the freezer and go right into the sous vide water.

>heat your water first. It takes a looooong time to heat up a big pan of water with just the anova. Get it hot with a kettle or stovetop first, then use the anova to find the temp you want
