Salt the steak (a fuckload, like wayyy too much, make it look mostly white. it'll sink into it dw) and season
"mop" up the salt and seasoning on the board w the fat
Leave to rest for like an hour to get it to room temp
Place in a nuke hot pan
Add salted butter
Turn steak on side to melt the fat
Do whatever else you gotta do, cook slightly below liking
Remove onto board and pour a little of the buttery-oily juice on it and rest for a few mins (it will keep cooking on the inside but keeps the outside from overcooking)
Add sea salt to taste
SO FUCKING GOOD
If having pasta with the steak, pour a ladle of the salt water into the pan, works wonders and keeps it nice and moist
