Actually Witcher potions taste awful because of the ultra-concentrated chemicals that are used when creating it. Witcher are able to consume them with no after effects because of their super-metabolisms, and Geralt underwent special mutations that allow his body to do crazy shit with ingested things.

They taste bad for sure, and probably enough to make you vomit it even if you can stomach the taste at first, but it's basically because you're drinking rancid ass-flavored chemical water that you can overdose from.
