How do I make good crunchy tendies where the batter/breading doesn't fucking fall off?

make sure you let the breading dry a little before you deep fry it.

If you are using batter, then it will be difficult to get them extra crunchy.

If you are using breading, fry them twice. First at 300F for 8-10 min then at 365 for 3 min....also, instead of using just flour, add in 10% corn starch and 25% panko bread crumbs

I actually really like Captain Crunch as a breading. Obviously you need to smash the shit out of it and add seasoning, but it tastes great as most of the sugars cook off in the frying process.

I had them in a restaurant in Burlington Vermont like 15 years ago, it was called Sweetwaters. I have no idea if it still exists but I've done it at home several times and it's fantastic.
