How would I go about melting cheese on bread without necessarily toasting the bread itself?

I have these yeast rolls that I think would taste delicious if they were filled with melted cheese, but I don't exactly what to toast them till they're crunchy.

What should I do? Should I just layer some shredded cheese between the rolls' bottom and top and throw that sandwich onto a pan with some water in the pan to steam? If so, should I have the pan on a higher or lower temp? Give me your tips.

Put some butter in a skillet and melt the cheese in there. You can set the buns to the side of the cheese and let them brown for a bit.
