i can't find my collection of /ck/ homemade tomato sauce recipes right when i felt like making some this weekend.

can we get a sauce thread?

also, what are some things you do with spaghetti? sometimes i make noodles, than pan fry them lightly in oil with garlic and oregano.

it always taste disappointing.

For standard spaghetti, I boil it with a shit load of sea salt and a few drops of olive oil. I got some Italian import spaghetti recently. Certified organic semolina, shit is cash as fuck.

is sodium content an indicator of knowing whether a sauce is shit or not shit?

I don't know, I always do the super simple method my mom showed me.

1 slice of bacon (diced)
500 gram ground meat (not low fat!)
About same volume as meat in Mirepoix (about 1 large onion, 1-2 carrots, 1 celery stalk)
1-2 garlic cloves (diced)
ca. 600g peeled diced tomatoes in own juice
(optional) some homemade concentrated tomato paste

>Put oil in a middle sized pot and add sliced bacon
>Bring to full heat
>Fry for a minute
>Add meat and break it up with a spatula
>Add vegetables and mix everything up
>Fry for 15 minutes with regular stirring until the meat becomes brown and onions caramelize a bit
>Add tomato stuff
>scratch off the caramelized stuff from the bottom of the pot (should come off on its own mostly because of the tomato juice)
>Optionally add some boiling water for a more fluid sauce (I add about 0.2 liters usually)
>season as desired
>cook for 30 - 45 minutes on low boil
