Just pan, let your steak seat on a kitchen counter for 20 minutes so they would not be too cold inside
I usually finish my steaks in oven only when they are straight out of fridge

I see you're using a steel skillet, is there anything special about it for this instance or will cast iron or non-stick work too? Also what temperature? I know high heat is ideal for searing if you're planning on finishing them on the grill, but in my experience (if I'm trying to do pan alone) that just leaves them raw on the inside instead of pink.

polished SS is better than cast imo, no need for seasoning and washes with just a soap and sponge.

Take steak out of fridge and let it warm up on a counter for 20-30 minutes. Lower the heat a bit after turning steak
