As an American, what's a good source of meat that I can use for Tartare? I've always wanted to make it but the percentage of 'safe'(most likely not diseased) meat is dubious at best here

Buy your meat from a quality butcher in the area not an ethnic market (Asian, Mexican, etc.). Those ethnic markets have good meat prices which are good for stews, etc. But you need top shelf for tartare.

Most American meat is safe, food standards in America are surprisingly strict. If you're worried you could go to any local butcher.

I'm not sure if CWD is harmful to people (Hardly anyone ever harvests a deer with CWD). Deer do carry salmonella and various tick-borne illnesses, as well as an encephalopathy or two that ARE transmittable to humans.

Most of the meat in major supermarkets took a month or more to get there after being slaughtered. Try to find a butcher that sells locally-sourced meat that hasn't been shipped from across the country. Tell them you're planning to make tartare and enquire as to what days they get their beef in. If they're half-decent they'll be happy to help you out.

buy a filet mignon steak. If you're paranoid, cut off the exterior layer and discard it. Mince the rest by hand right before serving.

find the closest veterinary college and go to the best butcher you can find that's close to it

1. I used to use tenderloin but a butcher I respect suggested I try sirloin and I have to agree, sirloin is best
2. Don't eat CAFO shit. Grass fed is the best way to go. All that horrible "marbling" you get with corn fed garbage is counterproductive for tartare. Fat is for meat that you cook, not meat eaten raw
