Use two kinds of cheese, something with flavor like a gouda, havarti, meunster that is melty, along with a colby or cheddar.
Good crusty bread. Cook it low and with real butter and sea salt until it's toasted well.

Sometimes I go italian with a grilled sandwich that has a parm crust.
What I do is butter, softened on the bread slices, then a minuscule layer of mayo on top of that, and adhere some grated parm to the mayo layer. Hit it with some garlic or parsley if you want. Toast until cheese is crusted over.

Advanced tip - when. Your grilled cheese is about done lift it off the skillet and drop a handful of shredded cheese in there then put the sandwich directly on top. Fry it up until it's crispy and repeat on the other side.

I like to butter both sides of the bread (or whatever oil you want to use), and brown the inside first. Then finish with whatever cheese you like best and thick cut pepper bacon. Just experiment, it's such an easy food to make and takes so little time. Caramelized onions taste pretty good too.

Heat pan or skillet to low heat. Pour a bit of canola oil (just a thin layer to cover pan). Add softened butter to pan. Adding oil first helps the butter spread better. Italian peasant bread with a combination of Swiss cheese with either a goat cheese herb spread, or muenster. Cook on low heat on each side to let bread absorb butter oil. Then cook on each side again on medium or high heat if you want more of a crunch. Ignore the mayo suggestions. If you want to give the bread more flavor use a brush and do a light coat of egg whites to both sides. I also prefer a small pinch of pepper on each side.
