OP, exponentially, there are few combinations that can be had at Chipotle. I think from a traditional mexican standpoint, vs the texmex side of it, the carnitas and barbacoa if not overshredded to strings, are kind of more comfy. The chicken and beef can be so overseasoned, so overchopped in dice, that you can't actually taste the beef or chicken anymore. So, it comes down to your health preference for white vs brown, favorite salsas and toppings, and whether you're in the mood to have a tortilla or 3, or none at all.

I don't find it weird to have a mexican beer with mexican food flavors, esp the chips and hot salsa. It's fine and not awkward. Not all Chipotles serve alcohol, however. Might come down to local ordinances, caps on bonds, and whether competing businesses nearby want to share the competition and allow another so close to have a license.
