Best: super slow smoked, 12-15 hours, with a good rub.
Second best: reverse braise. Brown lightly, braise until super tender, dry the surface, then re-sear in a super hot cast iron skillet to form a great crust. You're missing that smoke flavor but you do fet great texture- melty and tender with crispy seared edges. You can also then reduce down your pork-infused braising liquid and use it as the base of your sauce if you so desire.

Rub the day before
Smoke over a combination of apple and pecan wood - 1 1/2 hours per pound
Spritz every few hours with hard cider or apple juice, or beer, or a mix of juice and vinegar
Shred by tearing, don't slice
Serve with vinegar sauce.
