>that is eggs, tbs of milk per egg (3/4 if eggs are small) salt + other spices
>pour on greased pan, use only modest heat
>omelette takes about 10 minutes to settle
>if fillings need frying, use another pan and fry them separately, while eggs are cooking
>when the omelette has become cooked enough for flipping, but ideally still a bit runny on the top side, add the fillings on the one half, the carefully flip the other half of the omelette on the filling-topped half
>let it cook for 3-5 minutes more

Quite spimple once you get it.
Omelette is one of the greatly under-appreciated everyday meals; all you really need is eggs and whatever.
