Sup, /tg/ from Eastern Europe wants to treat his players to WFRP2 and classic nachos. I don't understand how to replicate the cinema-style cheese dip. I basically just shred cheese and dip it in a mixture of cornstarch and milk and heat that up, but it doesn't work.

I managed to get a tomato dip working well, but I need diversity at the table. Thanks for helpful posts.

It's not real cheese, it's processed cheddar cheese product. You won't be able to replicate authentic cinema/ballpark-style nachos at home. Go to the store and buy a box of pre-made.

Forgot to add that you can use Velveeta and a small can of diced tomato with chilis and melt it all down in a saucepan. No seasoning required.

The flavor of that ballpark cheese sauce comes from pickled jalapeno juice.

Make your sauce using either a bechamel, adding processed cheese to your traditional cheeses, or using an emulsifier like sodium citrate.
Acceptable cheeses are cheddar, and Monterrey/pepper jack.
