You will find stuffed artichokes (italian style with breadcrumbs is good use of old french baguettes) on nearly every bar or restaurant menu that sells boiled crawfish by the pound in season. I think maybe it's the butter dip that makes them go together so well with the same meal.

Two schools on this one. Butter vs mayo people. The bread is supposed to be soft, usually a top split kind of hot dog roll, sometimes it's butter toasted lightly. Then, the filling is pure steamed lobster with either a butter drizzle, or some fresh mayo (which features lemon juice).
That's it! Expect to pay about $20 if it's generous and really fresh. Someone has to pick the lobster claws and legs afterall, not just the tail.

Up north, there will be a season that even has a McLobster at McDonalds (don't have it), but it explains the popularity.
