No sir, I make mine in amerilard land. Pork butt or shoulder cut up into small bite size pieces. Add whole garlic cloves, whole bay leaves, paprika, ground red pepper, and salt. Then pour cheap white wine all over it and let it marinate for at least 24 hours in a large shallow basin. Remove bay leaf, grind, stuff and rest for 24 hours in the fridge. Smoke. Oh, artichokes are pretty damn common local to acadian cuisine all over Louisiana, usually stuffed. It came from the original French immigrants, and this was the region of the US that had them first. You will find stuffed artichokes (italian style with breadcrumbs is good use of old french baguettes) on nearly every bar or restaurant menu that sells boiled crawfish by the pound in season. I think maybe it's the butter dip that makes them go together so well with the same meal.

Two schools on this one. Butter vs mayo people. The bread is supposed to be soft, usually a top split kind of hot dog roll, sometimes it's butter toasted lightly. Then, the filling is pure steamed lobster with either a butter drizzle, or some fresh mayo (which features lemon juice).
That's it! Expect to pay about $20 if it's generous and really fresh. Someone has to pick the lobster claws and legs afterall, not just the tail.

Up north, there will be a season that even has a McLobster at McDonalds (don't have it), but it explains the popularity.
