Because miso soup is great. It's a bit boring at sushi places, but it's great for tossing veggies in at home, or using for broth in your noodle soup. Also, why the fuck would you want bread just before eating a shit ton of rice?

When you walk into a hibachi place hungover as hell, it really helps out. Or when you go and order drinks early, the salt blends well with a lot of alcohol. In reality, its super cheap stock that they get away with serving.
