1. That sauce was steaming hot as he poured it in.
2. That looked like a cast iron pan he was finishing the meat/sauce in, so he likely had it preheating in a high-temp oven for a half an hour and those things retain heat like nothing else.
3. The outside of the meat was already seared so they weren't going in cold which would bring the heat down fast.

The way he seasons sort of makes sense. You want to season from a height to get good coverage but hes a manlet so he has developed this technique where the salt rolling down his forearm hairs spreads out really well. Personally, if i was a short chef, i would use a step ladder but whatever works for him i guess

I had that reaction the first time I saw Salt bae, but then I realized, after seeing him slice a tenderloin in half in mid air while blindfolded, that this guy must have mastered the skill of sharpening knives. If you look at how easily his knives go through whatever meat he's cutting, and how clean all the cuts are, it's pretty clear that he knows exactly how much abuse his edges can take before they need to be touched up.
