Then I use a bit of kosher salt on the surface of the patties once they're on the pan (no grill, so I use cast iron for just about everything). Medium rare. Slider buns with mayo, cheddar, and bleu cheese dressing, just a smidge.

My mother was from Belgrade, she always made pljeskavica, which is practically a burger but with pork, beef and/or lamb, with paprika, caraway and marjoram, and it kinda stuck with me. Never salt, though, apparently that ruins it since you've got to let it marinate for a while, overnight usually.

OP here.

Over the last 2 days I made the burgers 5 different ways. I ate each burger with nothing but a bun and thousand islands to be able to appreciate the differences in flavor.

Ranking:
1. Worchestire sauce + pepper
2. Salt + pepper (I thought you guys were memeing, but it actually came out 100x better than expected.)
3. garlic salt + pepper + onion powder
4. onion powder + garlic powder + salt + pepper + cayenne pepper
5. one of emeril's spice blends

Everything after the first 2 weren't worth making, they weren't terrible, just not nearly as good as the first 2. I still have some meat so I'm probably going to try one with fresh garlic and onion and see how that goes.

Celery salt & Worcestershire sauce are what I would use growing up. Now I break off a little extra for really good beef from the butcher who will either going to order or has a great blend incorporating short rib, and keep it salt & pepper
