In the US, every hot dog cart will have:
raw chopped onion
sweet relish or dill relish
sauerkraut
ketchup
mustard, probably a yellow and a spicy brown both
mayo
They may also have an onion sauce like Sabretts, which is a tomatoey-sweet onion chutney. They might also have sliced jalapenos or some kind of hot sauce.
