Dude, it aint a sword. That knife in his hand is no longer than 10 inches, so no. Go back to school. It's a common former ottoman region blade shape, and very correctly called an arab knife. When much longer can be called a kilij, but again, it's very short so is probably a pala.

It's not for cooking purposes. It was for killing. Look to the german designs when it comes to butchering and food blades that make sense for the purpose.

It IS called a scimitar, even in Germany it is often sold under that English name. It just takes its name from the Arab weapon because it functions by the same principle - the curved shape gives the edge maximum length and slicing power for its given blade length. The main cutting force is always concentrated at just one point of the blade, too, because of the curve so you can use it for delicate cutting tasks.

I will admit that it is not ideal for what is done with it in the video though. A normal slicer should have been used for that.
