How to make the best grilled cheese?

IMHO, grilled cheese needs to be either the basic classic, or it needs to go all-out and over the top.

Basic: White bread, kraft single, cooked in butter.

Fancy: German rye bread, slow-cooked short rib meat, caramelized shallots, gastrique, St. Andre or another soft, funky French cheese.

Another good fancy one: Sourdough, goat cheese, bacon, caramelized slices of apple or pear

Colby jack is good. I also like a sharp white.
Get some sourdough. Honestly most bread is fine as long as it's not too soft.
Slather in butter and throw it in a pan. (I've heard mayo is superior but I haven't tried it yet.) Add grill press. If you don't have a press, use a spatula to press it flat onto the pan.
Cook slowly in order to melt the cheese before burning the bread.
Cut diagonally. If you cut your sandwiches horizontally you're subhuman.

Add rosemary to butter when cooking or use a bread with rosemary baked in
Colby jack cheese for melty goodness

If you want to get extra fancy, put some brie and aged cheddar in a food processor until you get a spread. Aged cheddar on its own doesn't melt that evenly because it is so dry.

I think one thing that is important is letting your cheese come up to room temp beforehand. The faster the cheese melts the crispier and less fat soaked bread you will have.
