It depends, if you're gonna have it on a sandwich, crispy is usually best. If you're having it on your own or next to eggs or whatever, less crispy is good, but it still needs to have some crisp.

I just recently made bacon in the oven for the first time, and it really blew my mind. It had way more flavor to it than regular pan fried bacon. It usually stays pretty straight due to evan heat distribution in the oven.
