Coconut shrimp for Christmas eve.

Along with shrimp soup, salmon sashimi, fried oyster mushrooms and oven baked scallops.

Well, it's Christmas eve. I have some very nice cuts of locally caught wild sea trout that I'll just seer ever so slightly for Christmas. Some fire roasted chestnuts, too.

About to get started on some hot artichoke dip with langoustines for later this afternoon. For Christmas Eve dinner, I'm making beef stroganoff, a mixed green salad, and yeast rolls. With a variety of cookies I made for dessert along with eggnog and whatever spirit people want to add to it.

For the batter:
- 1 egg
- 2/3 cup beer
- 1/2 cup flour
- 1 1/2 teaspoon
Mix all that in a bowl.

You also need some extra flour and about cup or two of dried coconut flakes.

Put the shrimp into the flour first, then into the batter, shake off excess and roll it into the coconut flakes. Place onto a baking sheet and leave in the fridge for at least 30 mins.

Heat up oil in a pan. Fry them for about 3 minutes, until golden brown, turning them over once.
