I don't often eat them but I made a batch last night.

Brine skinless, boneless chicken beast for 4 hours. Remove and dry thoroughly. Cut into bite size pieces. Mix equal parts corn starch and AP flour with some paprika, salt and pepper. Beat 2 or 3 eggs with a Tbs of water. Coat chicken with flour mixture, dip in egg, and coat with flour again. Heat several inches of peanut oil in pot to 360F. Carefully place chicken in oil and cook until they float and are golden brown, @ 8 minutes. Drain on racks. Do not crowd pot. Fry in batches.

the ones mummy buys in the frozen bag and if im extra good or its my birthday she will deep fry them instead of bake it like she normally does. I cant use the oven so when she isn't home I have to cook them in the microwave
