Suggest a vegetable for my marinara sauce. So far I am using shredded carrot, tomatoes obviously, and a lot of minced garlic. I will be cooking it with stewing pork and it will be served over rice because I don't like pasta. I'm thinking about using zucchini. Anyone else have an idea?

Chopped leafy greens. Spinach, kale, etc. Bok choy has too much water imo, unless you have time to let it simmer down.

Add some sauteed minced onion anyway. It won't taste like "onion," but it will add a depth to the flavor.

When I make marinara I toss cored halved tomatoes, onions and garlic with olive oil, salt and pepper, fresh rosemary and thyme, and basil l if I have any, but I usually don't. I roast it, blend it, then stew it with some red wine. Wala.
