Its so goddamn easy. The bulk of the chili is made of:
Meat (first timers use ground beef)
Onion (pick a type, use a lot, it cooks down)
Beans (white or red beans are fine, but they all work)
Tomato (can of anything will get the job done)

That's it. Now add a ton of spices, a lot of chili powder is mandatory. Most of the time a lot of garlic too. Since this is baby's first chili, you can use prepackaged envelopes, the MSG in them actually helps make a tasty chili.
Start there, and customize as you see fit. Top with cheese and sour cream.

I'll usually give that half an hour to an hour (if tougher cuts of meat, cook longer) and add my seasonings - paprika, a bit of smoked paprika or ancho, cumin, oregano, garlic, usually a bit of dark chocolate, salt and pepper, that gets another 5-10 mins and it's chili.

It is my firm belief that man can subsist on nothing more than chili and anger.

To that end, I have decided to share my own favorite chili recipe with the lot of you, so that you may convert your shame and anger into chili and anger. In this way, I am the best humanitarian who has ever or will ever live.

I'm going to be breaking a few sacred chili rules here. Too bad; I apologize to no one.

Ingredients:

1 & 1/2 to 2 lbs of ground PORK (perfect way to uncover Jews)
2 packages of french onion soup mix (be prepared for your chili to surrender)
2 tablespoons of chili powder (less if you're a baby, more if you're a man)
4 teaspoons of ground cumin (omit this and I will devour your soul)
1 teaspoon of black pepper (slightly racist)
1/2 teaspoon of salt (or none if you're heaving a heart attack right now)
6 ejaculations (squirts) of Tabasco sauce
1 21-ounce can of red beans and 1 21-ounce can of black beans (I have a dream)
2 6-ounce cans of tomato paste with garlic (regular tomato paste = you're an asshole)
2 8-ounce cans of tomato sauce (real men need more than just paste)
1 yellow, orange or red pepper, chopped up (green peppers are Satan's taint)
1 package of sliced mushrooms (yes, you can slice your own mushrooms, smartass)

Instructions:

Put the meat in a huge chili pot and brown it over medium heat
Add 4 cups of water and the french onion soup mix. Stir and let simmer for 10 minutes
Stir in the spices and the Tabasco and simmer for another minute or two
Add the beans, the mushrooms and the chopped pepper
Turn to low and let simmer for at least 20 minutes, 40 is better, stirring every 5-10
Call your mother and tell her she's not allowed to hug you anymore

And that's it, you're done. You just went from a pathetic, flaccid pushover to a chili-chewing boner-owner in about an hour. Your life will thank me.

Here's how I do it.

>Ground beef, 1.5 lb
>butter
> 2 large onions
>3 cloves garlic
>Serrano peppers, to taste I use a lot
>bottle of beer, I usually use an amber ale
>Large can crushed tomatoes
>Large can pinto beans, rinsed
>ground cumin, to taste
>ground oregano, to taste
>cocoa powder, to taste
>sambal olek, to taste

Melt butter in large sauce pot, add diced onions and garlic, cook until softened. add beer. Blend this mixture and put in a bowl. Brown beef, then add peppers and cook those a bit. add onion mixture back into pot along with tomato, beans, and sambal olek. add spices, I never measure, but don't add too much cocoa. SImmer for at least half an hour, longer is better.

My friends tell me its great chili. The weird blending thing is for texture reasons and it helpsjustify my purchase of an immersion blender.

I do a cheap and simple one in a big pot sometimes:
>200-300gr of frozen chopped onion (let it simmer in rapeseed oil or olive oil, whatever).
>One to two fresh bellpeppers (at least one green or orange one), let it simmer with the onion.
>~80gr of chopped green chili-pepper from a tin (toss it in there).
>800gr of fresh minced meat, either pork, beef, or mixed, let it sear for a while.
>After the meat has browned, add two TexMex taco spice bags, stir it out and let it sit for a while.
>Now add two cans or packets of crushed tomatoes, stir it out then let it sit.
>Plop in a container of creme fraiche and stir it out, again let it sit.
>Add a teaspoon of Sambal Oelek, stir it out with the teaspoon.
>Add some tablespoons of pureed tomato (mostly for color).
>Add package of red beans and stir them out.

And I guess that's it. It's not a refined recipe, and I could probably work out my own spicemix for better results some day (and I could likely get better results with fresh chili-pepper), but it functions and tastes good. I like adding a fistful of crushed Cheese & Onion Pringles to each bowl and mix it out, as well as add chunks of fresh avocado (rounds of very well with the strength of the dish), a side of fresh hot garlic bread is pleasant too. I don't know how common it is in other countries, but it's onion which are diced then frozen, pic related is a store brand product (resealable bag even).

There's next to no processing involved in these products so it's largely ok, I use it for hot dishes where it gets soggy and cooked anyway, so I don't know if it's as good if you just leave it out to thaw.

You can get similar products for dill and parsley.

Sweet & Spicy Chili

half lb ground
1 diced onion
~5 chopped mini sweet peppers
~2 tablespoons chopped candied jalapenos
can of rinsed beans
can of diced tomatoes
can of tomato paste(I like my chili thick as fuck, if you prefer runny watery chili use tomato sauce)
~4 minced garlic cloves
~1.5 tablespoons chili powder
~1 teaspoon cumin
dash of cayenne pepper
salt & pepper to taste
bay leaf

cook onions and peppers in oil on low until soft
add chili powder, cumin, and garlic
stir and cook ~1min
add meat and salt and turn heat up
cook till meat browns
toss this plus everything else(except bay leaf) into a slow cooker
put on high for an hour, stirring once half way
stir again, put on low, make a hole in the middle and stick the bay leaf in
cook for 3-4 hours, stirring occasionally but making sure the bay leaf never touches the hot sides (or it ends up tasting like bay leaf chili tea)

take the fucking bay leaf out and enjoy

Vegan chili for days on the cheap

1 can each of red kidney beans, black beans, and pinto beans.

1 large can of crushed or diced tomatoes

Half a medium onion

3+ cloves of garlic

1/4-1/2 cup broccoli cut bite size

1/2 cup cauliflower

1/4 cup frozen corn

5 tsp chili powder

1 tsp cumin

1/4 tsp smoked paprika (optional)

1/2 tvp or vegan plant crumbles

Salt to taste. I use 1 tsp

Pepper to taste after cooking is finished

Dice onion chunky and saute with a bit of olive or vegetable oil until onions are translucent.

Add chili powder, garlic (minced or crushed) and cumin and cook until fragrant (1-2 minutes) .

Add beans that have been drained and rinsed

Add whole can of tomatoes

Add vegetables and tvp or crumbles

Bring to simmer and reduce heat to low cooking covered for 1-2 hours.

Enjoy chili you can't tell apart from most others.

If you have good fresh tomatoes then by all means use them! But not everyone has a vegetable garden at home, or a source for good tomatoes.

Supermarket tomatoes are crap 99% of the time. They are a specific breed which is very durable and looks nice even after rough handling & shipping. The problem is they don't taste very good. Canned tomatoes avoid this problem.

Made some chili after reading everyone's advice, tastes pretty damn good!

2lbs hamburger
1 can pinto, 1 can kidney drained and rinsed
2 jalapeños, 1 deseeded
Full onion
Full bell pepper
3 cloves of garlic
3 diced tomatoes
1 small can of tomato paste
Half a can of tomato sauce

3 beef bouillon cubes and a little water while cooking so it didn't get too dry

1/4 cup chili powder
Little paprika
