This. Creativity isn't limited to meat eaters, and by trying to bypass the limitations in their ingredients, they come up with some interesting things.

One of my favourite restaurants is a veggie Indian place, but their stuff is more on the basis of religion than anything else.

I really enjoy making raw vegan food substitutes. It's fun, and while the substitutes never taste like the real thing they're usually delicious in their own ways.
