Want to make this dish but living in bum fuck rural America, I don't have access to any of the specialized ingredients (e.g. Shizuan peppercorns), does anyone have a suitable cheat recipe?

You can't really replace sichuan peppercorn for this.

You should be able to mail order all the shelf-stable ingredients though:

https://www.amazon.com/Sichuan-Pixian-Broad-Paste-Fivedayscombo/dp/B00BRQ0YC0
https://www.amazon.com/Healthy-Way-Peppercorns-Szechuan-Oz/dp/B000XAI5JK
https://www.amazon.com/Chinese-Whole-Dried-Red-Chile/dp/B00THPD0UG
https://www.amazon.com/Kadoya-Pure-Sesame-Oil-oz/dp/B0000CNU10

So all that's really left is tofu, ground pork, scallions, sesame oil, garlic, ginger and chicken stock

And remember, if your tongue is not sending you alerts that your face is melting off yet, add more chile.

I prefer thinly sliced beef with my Sichuan water boiled dish (literal Chinese translation). Oddly enough chicken doesn't absorb the flavor as well as fish or beef imo.

>>8268941
Many dim sum restaurants especially in America mostly serves Cantonese style food which makes it more difficult to find authentic sichuan food.

I had that for the first time on Friday. It was great. Spicy, soft tofu, chewy pork. It was more rich than I thought It would be. I regret not getting white rice instead of fried.

What's in it that creates the sensation of kind of a numbing, almost minty, feel?

I don't think you're supposed to eat them whole...? You're supposed to grind them up or something. Not sure.

Anyone got a good recipe?
I have tried 4-5 i have found online, and they are all decisively mediocre at best.

You were fortunate that you could see where the recycled food came from.

Would you have been so welcoming to the practice if you knew they did that behind the scenes in the kitchen too?

The waitress seemed pragmatic though.
