i bought some tortillas a couple days ago to try them out and see what i could do. melting cheese on top before adding other stuff for filling was the *first thing* i did. i didn't know what a quesadilla was. i thought i was a degenerate.

turns out it's a sanctioned action in cooking and i am vindicated in my vision.

also the cheese covers better if you slice it. get nice even slices and arrange them for full coverage, then throw that under the grill/broiler for a few minutes to get the cheese all chewy and greasy. i'll have to try making "real" quesadillas some time!

bell peppers/guacamole/onions/whatever else

a nice bowl of sour cream and/or white queso to dip in
